Cette recette originale avec son gremolata demande un peu de patience, car la cuisson des souris est un peu longue, mais qu\u2019importe\u2026 le r\u00e9sultat est terriblement savoureux !<\/p>\n<p><strong>Pr\u00e9paration\u00a0: 20 minutes<\/strong><\/p>\n<p><strong>Cuisson\u00a0: 1 h 30<\/strong><\/p>\n<p><strong>Pour 4 personnes<\/strong><\/p>\n<p>4 souris d\u2019agneau ou 4 jarrets d\u2019agneau<\/p>\n<p>3 carottes<\/p>\n<p>6 \u00e9chalotes<\/p>\n<p>1 bouquet garni<\/p>\n<p>1 bouillon cube<\/p>\n<p>2 c \u00e0 soupe de farine<\/p>\n<p>2 c \u00e0 soupe d\u2019huile d\u2019olive<\/p>\n<p>15 g de beurre<\/p>\n<p>Sel et poivre du moulin<\/p>\n<p><strong>Gremolata<\/strong>\u00a0: 6 brins de persil plat, 1 gousse d\u2019ail, 1 orange non trait\u00e9e<\/p>\n<p><strong>Pr\u00e9paration<\/strong><\/p>\n<p>Chauffer une cocotte avec l\u2019huile et le beurre, colorer les souris d\u2019agneau de tous les c\u00f4t\u00e9s et \u00e0 feu vif, les saler, les poivrer et les r\u00e9server.<\/p>\n<p>Dans la cocotte et les sucs de cuisson des souris d\u2019agneau, faire revenir 2 minutes \u00e0 feu vif les carottes pel\u00e9es et coup\u00e9es en tron\u00e7ons, les \u00e9chalotes pel\u00e9es et enti\u00e8res, saupoudrer de farine et m\u00e9langer, remettre les souris d\u2019agneau, ajouter le bouquet garni, 50 cl d\u2019eau chaude et le bouillon cube \u00e9miett\u00e9, couvrir et laisser mijoter 1 h 30\u00e0 feu tr\u00e8s doux, en retournant les souris de temps en temps, la viande doit \u00eatre fondante.<\/p>\n<p>Pendant ce temps, pr\u00e9parer la gremolata\u00a0: hacher finement les feuilles de persil, presser l\u2019ail et r\u00e2per la peau de l\u2019orange, m\u00e9langer et r\u00e9server.<\/p>\n<p>Servir les souris d\u2019agneau accompagn\u00e9es de leurs l\u00e9gumes de cuisson et saupoudr\u00e9es de gremolata.<\/p>\n<p><strong>Recette \u00e0 d\u00e9guster<\/strong> chaude<\/p>\n<p><strong>Pour acc\u00e9l\u00e9rer la pr\u00e9paration<\/strong> : pr\u00e9parer les souris d\u2019agneau mijot\u00e9es la veille et les r\u00e9chauffer le lendemain<\/p>\n<p><strong>Pour varier la pr\u00e9paration<\/strong> : remplacer l\u2019orange par 1 ou 2 citrons<\/p>\n<p><strong>Accord Met\/vin<\/strong> : un Bergerac rouge ou un Morgon (Beaujolais)<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/terroirevasion.com\">http:\/\/terroirevasion.com<\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0\u00a0 RECETTE DE LA SOURIS D\u2019AGNEAU&#8230;<\/p>\n","protected":false},"author":2,"featured_media":11859,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[65,64],"tags":[1620,650,1621,989,1619,1618,1617],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v21.9.1 -
