Commencer par laver les salades, les asperges, les radis, les petits pois. Retirer la premie\u0300re peau des oignons botte.<\/p>\n<p>2. Couper les asperges a\u0300 la mandoline dans la longueur et les radis en rondelle.<br \/>\n3. Cuire les petit pois et les oignons botte dans de l\u2019eau chaude puis une fois e\u0301goutte\u0301s les refroidir imme\u0301diatement.<br \/>\n4. Utiliser des tomates confites de\u0301ja\u0300 pre\u0301pare\u0301es, les couper en quatre.<br \/>\n5. Confectionner votre vinaigrette avec la moutarde de Reims, le vinaigre de Reims et l\u2019huile de tournesol. Me\u0301langer le tout, laisser au frais.<br \/>\n6. De\u0301couper le Chaource en cubes de 2 centime\u0300tre de co\u0302te\u0301. Les rouler dans la farine, l\u2019\u0153uf battu et la chapelure, frire.<br \/>\n7.
