Emmanuel Ryon (Meilleur Ouvrier de France Glacier, Champion du monde de pa\u0302tisserie) et Olivier Menard (pa\u0302tissier forme\u0301 entre autres par Pierre Herme\u0301) jouent leur partition avec brio et proposent une galette glace\u0301e, une galette traditionnelle et une brioche des rois addictives&#8230; Depuis deux ans, ensemble ils cre\u0301ent une pa\u0302tisserie glace\u0301e de haut vol qui nous pousse a\u0300 braver les saisons pour se re\u0301galer de merveilles glace\u0301es<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"page\" title=\"Page 2\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p>Galette glace\u0301e<\/p>\n<p>Taille unique 5 personnes \/ 32 euros<\/p>\n<p>Emmanuel Ryon renouvelle le genre de la galette des rois et imagine une galette glace\u0301e qui se re\u0301ve\u0300le en bouche. La pa\u0302te feuillete\u0301e pur beurre cache une cre\u0300me glace\u0301e aux amandes, des meringues fondantes et des drage\u0301es aux amandes. Il faut la de\u0301guster tie\u0300de, apre\u0300s un court passage au four, pour de\u0301couvrir la richesse des accords, des textures, notamment le de\u0301licat croustillant du feuilletage, et approcher ce plaisir parfait auquel aspire le pa\u0302tissier.
